* 1 pkg thick cut bacon
* 1 medium onion, finely chopped
* 1 Tbs minced garlic
* 1/4 cup light brown sugar
* 2 Tbs instant coffee
* 2 Tbs balsamic vinegar
* 1 tsp fresh ground pepper
Cook up your bacon until crispy. Cutting slices may help with cooking quicker, but I just tossed whole slices into a pot with a lid and stirred occasionally.
When bacon is done, place bacon on a paper towel to drain.
Remove most of bacon dripping. Leave about 1/4 cup of bacon grease in the pot and bring stove top to low-medium. You will continue to use in the next step.
Your extra bacon grease can be used for other recipes! So keep it on hand and experiment!
Toss your onion, garlic, coffee, brown sugar, balsamic vinegar, and pepper into your heated pot of bacon grease. Stir well and cover. Stir occasionally, let cook together for 10 minutes.
If at any time your mixture seems to heat up too quickly and begins to thicken too much, add about 1 Tbs of your extra bacon grease to your mixture.
While your mixture is cooking on the stove, toss your crispy bacon into a food processor and ‘mince’ until bacon is very fine and almost mushy to the touch.
Remove from food processor and set in small bowl.
No need to clean or put away the processor yet, you will be using it again.
Check your mixture cooking on the stove. Add your bacon mush and stir well. Let cook together for about 5 minutes.
Place new mixture into your food processor and mince until you can no longer see any onion pieces.
Remove from processor and place in storage container. Let cool and place in refrigerator for at least a few hours to set.
Bacon grease may separate. Make sure to stir before serving. Best if heated but can be served cold.
Ideas to use this recipe with: Place on a warm biscuit/english muffin (with or without a fried egg), put thin layer on toast with melted cheese slice on top, or use to add a little bacon-flare to any recipe!
