Summer Bacon Recipes

I am still playing around with various bacon recipes myself. So, I searched the web for some easy and delicious recipes to try for this summer. Check them out (click on the links to go to the recipes directly):

Bacon and Tomato Guacamole
Note on recipe: Bacon + Guacamole = Heaven. I personally do my guacamole recipe differently, but this is a great new twist to try in the near future.

Emeril’s Red Bliss Potato Salad with Crispy Bacon
Note on recipe: I LOVE red skin potatoes. Bacon just makes this even better. It’s a simple recipe, but a great side dish!

Cavatappi with Bacon and Summer Vegetables
Note on recipe: This seems like a wonderful light dish to have at the end of a hot summer day. It’s not really for a grilling day but great for a easy, light meal idea.

Summer Succotash with Bacon and Croutons
Note on recipe: This would be a great side dish for grilling or even a quiet night in. This link even gives you an additional recipe on making your own croutons.

Shrimp Salad With Warm Bacon Dressing and Summer Bruschetta
Note on recipe: This one is not as quick of a recipe as the others, only because it is actually two small recipes meant to be enjoyed together.

Coolhaus’ Candied Bacon Ice Cream and Chocolate Chip Cookie Sandwich
Note on recipe: I love the fact that booze are part of this recipe. Bacon and booze go well together, but always responsibly. And the fact that they made sure to use ‘candied’ bacon lets you know this person knows what they’re talking about.

If you do try any of these recipes, feel free to drop a comment to let me know how it turned out for you. I hope to try some of these this summer. They all seem light and refreshing…. exactly what we need after a hot summer day in Florida.
