Bacon Wrapped Asparagus
*** NOTE: This recipe is best if done over a charcoal grill.
* package of fresh asparagus
* package of bacon (i used hardwood smoked)
* Pam Olive Oil Spray
Prepare your asparagus. Wash your fresh asparagus and cut 1/2 inch off the opposite end of the spear tip. Cutting off the end will remove that tough piece and allow the asparagus spears to cook throughly.
Pre-cook your asparagus. Heat up a pan with olive oil. Cook your asparagus up until the tip is partially limp. Cooking time varies on the thickness of your asparagus. You only want to cook until the tip sags slightly when picked up with tongs. We are pre-cooking so grill time will be quick.
Set aside to cool.
Time to wrap! You will be using one full slice of bacon for one asparagus spear. Start at the tip of the spear and wrap at a slight angle, overlapping just slightly so the bacon sticks to itself. If you have extra long strips then go back up the spear to double wrap or cut remaining off. I was lucky to have all my pieces perfectly match up.
Now time to grill your asparagus until the bacon is fully cooked. Since you already pre-cooked your asparagus, then you do not have to worry about a long cook time.
Set aside to cool for a minute and enjoy!
NOTES ON THE RECIPE:
* You have many opportunities to make adjustments to this recipe. You can chose to use any flavor of bacon and add any seasonings you wish. I chose not to add any seasonings because the asparagus being wrapped in hardwood bacon seemed to naturally add a wonderful flavor while being grilled.
* This was my first attempt at this recipe and I am open to any suggestions or ideas on how to improve it.
